How to sharpen knives correctly? A practical guide to knife sharpening

If you want your knife to really cut and not crumple, it’s not just about sharpening it, it’s about doing it in the right order. Sharpening is a whole process, from shaping the edge to polishing, and the consistency of your approach will determine not only the result but also the life of the knife.

Why can’t the sharpening procedure be ignored?

Sharpening a knife is the step-by-step shaping and grinding of the cutting edge. If you skip one of these steps, you risk:

  • getting an uneven edge;
  • losing sharpness after just a couple of uses;
  • excessive grinding of the steel;
  • disappointment in your own skills (although it may not be you, but the choice of sharpening stones).

Step-by-step procedure for sharpening knives

1. Assess the condition of the knife

Before you start:

  • Check the edge for chipping.
  • Determine if there is any residual micro-feed.
  • See if the geometry of the blade is uniform.

If there is damage, use a rough diamond or CBN stone from UKSG.tools (60-100 grit) to restore the shape.

2. Coarse sharpening — edge shaping

Tool: 160-225 grit abrasive (CBN, diamond). Here a new bevel is formed and the angle is set. It is very important to achieve a uniform burr along the entire length.

3. Medium sharpening — strengthening and stabilizing

Tool: stone 240-650 grit. Here you:

  • eliminate risks from coarse grit;
  • strengthen the edge;
  • continue to reduce burr.

This is the most critical stage for forming a clean, aggressive cutting line. The knife is already «taking paper» but not yet «shaving».

4. Fine sharpening — a step towards razor sharpness

Tool: the 1100-1700 grit diamond or CBN stone, which you will find in our catalog, is ideal. Here:

  • residual burrs are removed;
  • the surface of the edge is polished;
  • a mirror-like shine appears on the edge.

5. Polishing — optional, but beautiful

Tool: 3000-15,000 grit stone, paste on leather, paste on cast iron lapping stones. At this stage:

  • finish cutting aggression and resistance is achieved;
  • approaches become «like from Instagram»;
  • edge «sticks» to the tomato.

6. Dressing and care

Use: leather slings, moussats or cast iron lappers (Lapping) in combination with diamond and CBN pastes. Regular dressing prolongs sharpness and reduces the frequency of full sharpening.

Additional tips

  • First always check the sharpening angle of the knife. Japanese knives are sharpened at a sharper angle (12–15°), while European knives are sharpened at 20°.
  • Don’t jump over a lot of grain. For example, going straight to 3000 after 400 is a bad idea.
  • Regularly adjust the knife on a honing rod or leather belt — this extends the interval between full sharpening.
  • Watch for symmetry — especially if you’re working by hand. An edge that is not symmetrical will quickly lose its shape.
